Puff Pastry Layers Filled With Berries And Lemon Whipped Cream

INGREDIENTS:
- 2 cup heavy whipping cream
- 2 lemons or limes (strained juice)
- ½ cup powdered sugar
For the puff pastry layers:
- 1 sheet puff pastry
- 1 1/3 cup berries of choice
- powdered sugar to garnish
DIRECTIONS:
- Mix heavy cream, lemon juice, and powdered sugar, making sure sugar is well dissolved. Fill the ICO Whipped Cream Dispenser with mixture.
- Close dispenser and charge with 1 N2O cartridge. Shake the dispenser a few seconds, so that the gas mixes with the contents. TIP: The consistency of the cream is directly related to the number of times you shake the dispenser after charging it. For a stiffer consistency, more shaking is required. For a softer consistency, less shaking is required.
- Let the filled whipper cool in the refrigerator in vertical position for a minimum of 2 hours.
- Meanwhile prepare puff pastry sheet by cutting it into 4 x 4 inch squares and bake according to its instructions.
- For the assembly of the dish, place layers of puff pastry interspersed with lemon whipped cream and berries.
- Decorate with powdered sugar.
