Zucchini Carpaccio

INGREDIENTS:
- 2 zucchinis
- 1 lemon (juice)
- Drizzle of olive oil
- Salt and pepper to taste
- Cherry tomatoes to garnish
DIRECTIONS:
- Utilizing the ICO spiralizer, without inserting one of the spare blades but using only the flat blade permanently on the spiralizer, spiralize the zucchini.
- Pour the lemon juice over the spiralized zucchini.
- Drizzle with olive oil and season to taste with salt and pepper.
- Cut the cherry tomatoes in half and use them to decorate.
